RASTI SALSA

INGREDIENTS

  • 2-4 cups total, fresh or frozen, ripe peaches, nectarines, or mangos, peeled and small diced.  You can use 1, 2 or a mixture of the fruit.

  • ½ lb. seedless grapes – stemmed and sliced in half or quartered

  • ½ cup minced red onion

  • ¼ cup chopped chipotle chilies in adobo sauce

  • 1 green and 1 red bell pepper-seeded and ribs removed-small diced

  • 1/2 cup chopped fresh cilantro

  • 3 large garlic cloves-minced

  • 1-2 tablespoons un-sweetened apple juice

  • Juice from 3 limes

  • 1 tablespoon light olive oil

  • Salt to taste

PROCESS

1)    In large mixing bowl combine diced peaches, grapes, red onion, garlic and chipotle chiles
2)    Gently stir in apple juice, lime juice, cilantro and olive oil.
3)    Salt to taste
4)    Cover and refrigerate for about 1 hour.
5)    Serve with your favourite tortilla or toasted pita chips.

*This salsa seems to get hotter the longer it is stored.  Which is fine, since it will only keep refrigerated in a covered container for about 3 days.
